Sam Choy's In The Kitchen

Laupepa Letuli and Tiare Kanoa former UH Athletes and newly vegetarians learn to make a delicious and simple vegetarian “beef” stew with Uncle Sam and Johnny.

Dishes Made

  1. Vegetable Stew
  2. Olive Crustini
  3. Cole Slaw Salad with Pickled Onion Juice Vinaigrette 

Vegetarian Stew 

  • 1 small onion chopped 
  • 1 clove garlic minced 
  • 1 rib celery chopped 
  • 1 carrot chopped 
  • 8 oz button mushrooms 
  • 1 dried rosemary  
  • 2 sweet potato chopped 
  • 3 cups vegetable broth 
  • 1 block tofu cubed 
  • 1 tsp dried rosemary 

Saute mixture of onions, celery, garlic in olive oil.  

Add broth and remaining veggies: carrots, potato, mushrooms, tofu and rosemary and let simmer to desired consistency. 

Vegetable Slaw 

  • 1 small head cabbage julienned 
  • 3 carrots grated 
  • ¼ cup onion sliced thin 
  • Mushrooms sliced thin 
  • 1/2 jar pickle onion sliced thin 


  • 2 tbl rice wine vinegar 
  • Pickle onion juice 
  • 1 tbl sugar 
  • Dash salt & pepper 
  • 1 tbl olive oil 

In a large bowl, combine all the vegetables toss in dressing mix all together and chill.
