In today’s ‘Healthy & Delicious’ segment, Sisi Kong, Community Outreach Team Leader at the health food store, shows us how to make gluten-free strawberry mint muffins.
“Muffins are so easy to make and will last the whole week,” says Kong.
According to Kong, the first step is to whisk together all of your dry ingredients.
Once those are whisked, we make the flax egg and butter milk.
“To make the flax egg we just add flaxmeal to water. For the butter milk, we add lemon juice to our almond milk,” says Kong.
After that, you just need to let both rest for about 10 minutes, stirring occasionally.
