In today’s Healthy & Delicious segment with Down to Earth,  Sisi Kong, Community Outreach Team Leader, shows us how to make a Vegan Christmas Pie.

“Christmas pies traditionally use mince beef, but we’ll be making a delicious lentil-filled pie and it’s actually gluten-free too,” says Kong. 

According to Kong, the first step is to preheat the oven to 375F.  

Then, take the cooked lentils and mash them until about two thirds of the lentils are mush.  

“This lentil mush makes everything hold together nicely,” says Kong.

Next, Kong shows us how to make flax eggs.  

“Eggs are often used in baking to hold everything together, but since this is a vegan pie, we’re going to mix flax and water together and let it sit for about 10 minutes to thicken into flax eggs,” says Kong.  

After heating the coconut oil in a pan over medium to high heat, she adds the leeks, celery and carrots and saute until they soften and begin to brown, for about 5 minutes.

Then she adds in the garlic, salt, thyme, rosemary and tarragon and saute a bit more.    

The next step, she says, is to mix the lentils, toasted pecans, veggies, flax mixture, oats and flour together, and once that’s all combined, we transfer the mixture to a pie shell.  

Finally, bake it for 25-30 minutes, until the crust is golden brown.
