Healthy and Delicious – Vegan Ricotta Fig Cake


When it comes to Thanksgiving, we all have our classic favorite dishes we prepare every year.

While we love our classic holiday favorites, it’s always fun to try new dishes and discover new favorites.

Down to Earth’s Community Outreach Team Leader Sisi Kong is teaching us how to make a new holiday dish called the Vegan Ricotta Fig Cake. 

Making vegan cheese is very easy, especially the ricotta.  

First, you soak cashews which will become the base for the cheese.

Then, you add lemon juice, nutritional yeast and salt. Most vegan cheese recipes contain ingredients like garlic to add flavor, but you want the ricotta to take on the sweet flavors so keep it basic.

Next, you add a couple of flax eggs.

To do this, mix ground flaxmeal with some orange juice.

Normally, flax eggs are made with water, but the orange juice tastes delicious with the vegan ricotta and fits.

Let the flax eggs thicken for about 10 to 15 minutes.

Then, it’s time to make the cake.

First, sift bread flour.

Then add coconut sugar, baking powder, salt and orange zest.

After you whisk the dry ingredients, whisk together the wet ingredients which includes the ricotta, flax egg and vanilla.

Next, you fold the wet ingredients into the dry. After that’s mixed, the figs and melted butter can be mixed in.

Transfer the batter into a cake pan, but before it’s baked, add some sliced figs and orange zest on top.

Bake the cake for 1 hour at 350 degrees.
