John Veneri is always up for a challenge, and he loves a good steak, so when he got the call from Butcher and Bird to learn some techniques, he was off and running.

Butcher and Bird is a full-service butcher shop at SALT at Our Kakaako.

“When you walk up to the counter, you’re going to meet myself or one of my apprentices, who are passionate about what we’re doing and excited to exchange ideas and let you know how to cook things and the best cut for your dish,” said head butcher Chuck Wakeman.

The shop recently launched a whole steer butcher class, and Wakeman plans to add classes on sausage making, whole hog, and a whole deer class for hunters.

Today, he puts John to the test to make a double cheeseburger from start to finish.
