Ultimate Chicken Club Sandwich

Ingredients


**Milton's Sandwich Making Contest - Finalist**

  • 3 grilled boneless/skinless chicken breasts- cubed
  • 2 boiled eggs- chopped
  • 4 oz. smoked turkey breast- cubed
  • 3 oz diced white onion
  • 3 oz. diced celery
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • 1/4 tsp Dijon mustard
  • Juice of 1 lemon
  • Low fat mayo

Other optional ingredients:

  • 6 thin slices of avocado
  • 8 thin slices of cucumber
  • 1 cup of alfalfa sprouts
  • 2 oz. of low fat Caesar dressing

Directions

Lightly toast 3 slices of Milton’s multi grain bread.

Assemble the sandwich:
On one slice of bread place a thin layer of meat filling, then on the filling place 3 cucumbers, 3 avocados and a little of the sprouts. Top sprouts with 1 oz of the Caesar dressing. Place another slice of bread on top and repeat process. Top off with last slice of bread.

(Optional for serving) Cut sandwich into four pieces diagonally and place toothpicks into each section. Serve standing on its side, each piece in its own corner of the plate.
