Curried Chicken on Milton’s Bread

Ingredients


**Milton's Sandwich Making Contest - Finalist**
  • Two slices of any Milton bread, lightly toasted
  • Tomato slices
  • Shredded lettuce
  • Red onion slices
  • Thin slices of cucumber
  • 2 tablespoons diced celery
  • 2 cups broiled chicken (thighs or breast) (plain or teriyaki)
  • 1 tablespoon red curry paste (adjust to your heat desire)
  • 5 tablespoons grapeseed mayo
  • 1 tablespoon dried cranberries, optional

Directions

Blend the curry paste and mayo in a bowl. Adjust combination to your heat preference. Set on the side.

Place chicken, celery and cranberries in a bowl and toss with mayo mixture. Add mayo mixture a spoonful at a time until mixture has reached desired consistency. Spread on toasted Milton bread, stack tomatoes cucumber, onions and lettuce. This mixture is also excellent as an appetizer on Milton crackers!
